Go for vegetables

Looking for healthy grills? Try grilling vegetables. They are so easy to prepare, easy to cook and oh so breaming with healthy goodnes.

Grilled vegetables

2 large tomatoes

1 large eggplant

1 large white onion

6 button mushrooms

3 tbsp olive oil

salt and pepper to taste

Slice each tomato into three, croswise. Slice eggplant diagonally into six. Slice onion crosswise. Halve the mushrooms. Put all vegetables in a bowl. Drizzle with olive oil and sprinkle with salt and pepper. Marinate for 15 minutes. Grill the vegetables over coals. You can also pan grill them. To serve, layer eggplant, tomatoes, onion and mushroom. Drizzle with chilli dressing.

To make the dressing: Mix 3 tbsp olive oil, 1 tbsp vinegar, 1 tsp freshly crushed pepper, 1 tsp brown sugar, 1 tsp chili flakes. Add more of any ingredients according to your taste.
